Asparagus Artichoke Salad
While you soak 1 large sliced shallot in lemon juice, take two pounds of asparagus, coat them with olive oil and salt and grill them with direct heat until they are charred and tender (about 10 minutes). Once done, cut them up into bite-size pieces. Now mix them in a bowl with a pint of cherry tomatoes cut in half and a 15 oz. jar of marinated artichoke hearts cut into quarters. Add the shallot and mix with a dash of garlic powder. This is best if served chilled.

Apple Walnut Tart
Start with a half a cup of chopped walnuts. Combine them with a quarter cup of gorgonzola cheese and 2 chopped apples (Granny Smith or Fuji) as well as 2 tablespoons of maple syrup. Sprinkle with lemon juice to keep the apples from browning. Cover with plastic wrap.
Take a packaged flat pie crust and roll it out until it is 13 inches across at about a 1/8th inch thickness. Place this on a cookie sheet and mound the filling in the middle of the dough. Spread it out until it is about 2 inches from the edge of the dough. Pleat the dough back over the filling and then bake it for 45 minutes to an hour at 350 degrees.
Let it cool for 10 minutes and cut it with a pizza wheel.
